Red Beans with Chicken

Step 1
How do you make canned red beans with chicken? Prepare the ingredients. You can use regular canned beans or beans boiled in advance. Peel the onion and rinse it. Wash the chicken fillet well and pat it dry. I used sliced processed cheese, but you can also use block-style processed cheese.
Step 2
Cut the chicken fillet into three portions and fry it on both sides in a pan with very hot oil. This helps the meat stay as juicy as possible during the next stage of simmering. If you want distinct grill marks, you can fry the chicken in a grill pan.
Step 3
Transfer the fried chicken breast to a plate and cover it with a lid or wrap it in foil so it cools more slowly.
Step 4
Finely chop the onion and garlic, first crushing the garlic with the back of a knife.
Step 5
In the same oil where the chicken was fried, sauté the onion and garlic, stirring with a spatula.
Step 6
Add the beans, either boiled or canned, to the onion, then add the tomato paste and 1 cup of water. Cook until done over low or medium-low heat, stirring. You can add the ingredients all at once or in stages.
Step 7
Place the fried chicken breasts on top of the beans in the pan.
Step 8
Put a slice of cheese on each piece of chicken. It will not fully melt, but it will soften. Simmer the chicken with the red beans under a lid for 10–15 minutes over low heat.
