Quick Khachapuri in a Pan with Kefir

Quick, tasty, and delicious - a celebration every day! Hot khachapuri can be served as a main dish or cold as a snack. Slice them for portions and serve with any vegetable side, especially mashed potatoes.

Preparation
Step 1
Use full-fat kefir (2.5% or 3.5%). Take it out of the fridge in advance so it warms to room temperature. Use cottage cheese in blocks. If coarse-grained, pass through a sieve or blend until smooth. Sift flour to aerate it.
Step 2
In a suitable bowl, mix sifted flour, baking soda, and salt. Stir well.
Step 3
Pour kefir at room temperature into the flour mixture. Mix first with a spoon, then by hand. Flour quality varies, so you may need more or less than stated. Adjust to desired dough consistency.
Step 4
The dough should be thick, firm, and slightly sticky.
Step 5
Divide dough into four pieces and roll into balls. Cover with a towel or bowl and leave for 15 minutes so gluten develops. This will prevent tearing when rolling.
Step 6
While dough rests, prepare filling. Grate suluguni cheese coarsely - this cheese is essential. Add other cheeses to taste: brynza, feta, or mozzarella.
Step 7
In addition to cottage cheese and suluguni, I use hard cheese. Any good quality cheese works well.
Step 8
Wash and dry herbs with paper towels. I used green onions, parsley, and dill. You can use just dill or substitute with cilantro. Finely chop the herbs.
Step 9
In a bowl, combine all cheeses: cottage cheese, suluguni, hard cheese. Add herbs and mix well. Filling is ready.
Step 10
Divide cheese filling into four equal parts and roll into balls.
Step 11
Lightly flour your work surface to prevent sticking. Roll one dough ball into a small flat circle - no need to roll too thin.
Step 12
Place one cheese ball in the center of the dough circle.
Step 13
Seal the edges carefully around the filling.
Step 14
Roll gently into a flatbread about 6-8 mm thick. Repeat for other dough portions.
Step 15
Heat a skillet well, no oil needed. Place one khachapuri in the skillet. Cook over moderate heat for 3 minutes per side under a lid.
Step 16
Stack cooked khachapuri, brushing with a piece of butter immediately.

Serve hot with your favorite sauce, herbs, or vegetables. They’re also delicious with tea. Enjoy!
