Quick Cottage Cheese Cookies

Quick to make, budget-friendly, simple and tasty! Quick cottage cheese cookies are easy and accessible. They take just about half an hour to prepare and bake. So easy to cook that even a beginner can handle it. Kids and adults alike will love them!

Preparation
Step 1
You can use cottage cheese of any fat content, but it should be soft and not sour. Packaged cottage cheese works fine. Take butter out of the fridge in advance so it softens at room temperature.
Step 2
Mix flour with baking powder and vanilla, then sift through a sieve. This enriches the flour with oxygen and helps the cookies rise better.
Step 3
Mash the cottage cheese with sugar. Adjust sugar to taste. If the cottage cheese isn’t soft enough, blend it. Mine is soft with small curds, so I just mashed it with a fork.
Step 4
Add an egg to the cottage cheese mixture and mix until smooth.

Add the softened butter and mix quickly.
Step 6
Add the sifted flour with baking powder and vanilla. Start mixing with a spoon. Don’t add all the flour at once - you may need more or less depending on the cottage cheese’s moisture. Mix in most of the flour, then add the rest gradually.

The dough should hold its shape well, hardly stick to your hands, yet remain soft and pliable. Quickly gather the dough into a ball, wrap in plastic, and refrigerate for 30 minutes.
Step 8
Divide the chilled dough into equal parts. Roll each into a ball and flatten into a cookie about ½-⅔ inch thick (1-1.5 cm). Alternatively, roll out the dough and cut with cookie cutters.
Step 9
Place the shaped cookies on a parchment-lined baking sheet, leaving some space between them. They will rise a bit while baking.
Step 10
Bake in a preheated oven at 350°F (180°C) for about 20 minutes. The cookies should stay pale with only a light golden tint. This keeps them soft and tender. Too much browning may dry them out. Adjust time to your oven’s specifics.
