Puff Pastry Pockets in the Oven with Cheese, Chicken, and Potatoes

Preparation
Step 1
Remove the puff pastry from the freezer in advance so it can thaw and soften. Peel and rinse the potatoes.
Step 2
Cut the chicken fillet and peeled potatoes into small cubes. Heat a skillet with a little vegetable oil and add the potatoes and chicken. Fry over low heat for 7-8 minutes.
Step 3
Peel and finely chop the onion. Add it to the skillet and cook everything together for another 2-3 minutes. Season with salt and spices to taste. Let the filling cool slightly - if it’s too hot, the dough will soften and be hard to transfer to a baking tray.
Step 4
Lightly roll out the puff pastry and cut it into squares. Place some filling in the center, add grated cheese, and fold the corners of the pastry to the center. Pinch the edges, leaving small openings for steam to escape.
Step 5
Place the pockets on a baking tray lined with parchment paper. Brush the tops with egg yolk. Optionally sprinkle with sesame seeds or poppy seeds. Bake in a preheated oven at 180°C / 355°F for 20-25 minutes.
Step 6
The pockets should become golden and slightly puffed. Remove from the oven, cool slightly, and serve. Enjoy!
