Preparation
Step 1
I use boiled porcini mushrooms, but you can take any kind, such as champignons. They don’t need boiling, you can fry them directly. Peel the potatoes in advance, rinse under running water. Sour cream can be of any fat content.
Step 2
Peel the onion, rinse in cold water, and finely chop.
Step 3
Take a convenient deep skillet for frying. Heat it until hot and pour in a little vegetable oil. Add the finely chopped onion and fry for about 1 minute until translucent and fragrant.
Step 4
Add the mushrooms to the skillet and stir with the onion. Fry for another 2-3 minutes.
Step 5
Cut the peeled potatoes into thin strips or rounds. Add them to the skillet. Continue frying for about 10 minutes. Do not cover with a lid so the potatoes don’t fall apart.
Step 6
In a glass, mix sour cream with some water and pour over the potatoes. Season with salt and spices to taste. Stir, cover with a lid, and cook over low heat for about 10 more minutes.
Step 7
Potatoes with mushrooms and sour cream are ready! Remove from heat, place on plates, and serve hot. Enjoy!
