Potatoes Stewed in Sour Cream

Simple and delicious everyday lunch or dinner! Potatoes stewed in sour cream are ideal as a family meal, side dish for meat or fish, and pair wonderfully with fresh vegetables.

Preparation
Step 1
Peel potatoes in advance, rinse under running water, and pat dry with paper towels. Sour cream can be any fat content; I use 15%.
Step 2
Use a pot or skillet. I use a pot. Place butter and a little vegetable oil at the bottom. Heat over medium-high heat until the butter melts.
Step 3
Peel and rinse the onion. Chop finely and add to the pot. Sauté about 1 minute on medium heat, stirring constantly, until soft and translucent.
Step 4
Peel and rinse the carrot. Pat dry and slice into rounds. Add to the pot with the onion and sauté another minute until slightly softened.
Step 5
Cut potatoes into large chunks and add to the carrots and onions.
Step 6
Mix sour cream with water and pour over the potatoes, stirring to combine. Add salt and spices to taste. I use dried basil; black pepper, dried dill, and garlic also work well. Bring to a boil.
Step 7
Once boiling, reduce heat and simmer covered for 20-25 minutes until potatoes are tender and fork-easily pierced. Avoid overcooking.
Step 8
