Potato Pizza in a Pan

Original, very tasty, perfect for a family dinner! Potato Pizza in a Pan is a quick way to prepare a favorite dish, where grated potatoes replace the dough. The base turns out like a large potato pancake, and mushrooms are used as a filling, which pairs wonderfully with potatoes.

Preparation
Step 1
First, prepare the filling ingredients. Like with classic pizza, you can use sausages, meat, pickles, olives, or peppers. I chose bacon and mushrooms. I used red onion, but white or leek will also work. Take either a couple of large tomatoes or several cherry tomatoes.

Cut the bacon into thin strips.
Step 3
Wash the mushrooms carefully, then pat them dry with paper towels. Excess moisture will make them watery and bland. Slice the mushrooms.
Step 4
Peel the onion and cut it into half rings.
Step 5
Wash the tomatoes and cut them - slice the large ones into rings, halve the cherry ones. Grate cheese on a medium grater so it melts faster. Any cheese works - hard, semi-hard, or soft like mozzarella. The key is good quality and no vegetable fat substitutes.
Step 6
Prepare the ingredients for the base. Take 3 large or 4 medium potatoes, about 500 g (1.1 lb) total. From this amount, I got one pizza in a 24 cm (9.5 in) pan.
Step 7
Make the potato base. Wash and peel the potatoes, then dry them with towels. Grate on a fine or medium grater. I used medium - it was faster and fried perfectly.
Step 8
If your potatoes are very juicy, squeeze out the excess liquid. Add 1 egg, salt and pepper to taste, and flour.
Step 9
Mix the potato dough until smooth. The consistency should be medium thick.
Step 10
Heat a pan over medium heat, add the bacon. Fry for a couple of minutes, stirring. If the bacon doesn’t release enough fat, add a little vegetable oil. Add onion and mushrooms to the bacon. Season lightly with salt (remember, bacon and cheese already contain salt). Stir and fry for 5–7 minutes over high heat, until the mushroom liquid evaporates.
Step 11
Meanwhile, heat another pan. Add a little vegetable oil. Spread the potato dough evenly over the bottom. Fry the base over low heat for about 5 minutes. I covered the pan with a lid for a couple of minutes to ensure the potatoes cooked through. Once the bottom is golden, flip it to the other side. To avoid breaking the “pancake,” slide it onto a plate first, then return it to the pan flipped.
Step 12
Place the prepared filling on top of the potato base, sprinkle with spices to taste (I used oregano). Add the sliced tomatoes. Sprinkle with grated cheese.
Step 13
Lower the heat, cover the pan, and cook the pizza for a few more minutes until the cheese melts.
Step 14
Serve the pizza immediately - like a classic pizza, it’s best hot. Enjoy!
