Potato Pizza

Delicious and filling, perfect for everyday meals for the whole family! Potato Pizza resembles an open pie. It can be served as a standalone dish or as a bread substitute with soup. You can also add mushrooms or sausage for variety.

Preparation
Step 1
Peel potatoes in advance and rinse off any dirt. Sift the flour to aerate it; this makes the dough lighter and fluffier.
Step 2
To make the dough, combine dry yeast, salt, and sugar in a bowl.
Step 3
Add warm water and vegetable oil. Mix thoroughly.
Step 4
Gradually add flour while kneading the dough. Adjust the flour amount depending on the consistency of the dough.
Step 5
The dough should be soft, elastic, and not sticky. At the end of kneading, you can lightly oil your hands to prevent excess flour absorption. Cover the dough with a towel and let it rise in a warm place for 1 hour.
Step 6
While the dough rises, prepare the filling. Boil peeled potatoes in boiling water for about 20 minutes until tender. Drain the hot water, leaving a little in the pot. Mash the potatoes with the remaining water and lightly salt. You may add dried herbs or spices.
Step 7
When the dough has risen, punch it down and divide it into 2-3 portions for pizzas.

Roll out one portion into a circle on a sheet of parchment paper.

Spread the mashed potatoes evenly over the dough.
Step 10
Arrange grated Adyghe cheese and tomato slices on top.

Sprinkle with grated hard cheese. Bake the pizza in a preheated oven at 392°F (200°C) for 20 minutes, adjusting according to your oven.

Remove the pizza from the oven and serve hot. Enjoy!
