Potato Pancakes with Onion

Preparation
Step 1
Peel the potatoes in advance and rinse them under running water to remove any dirt.

Peel the onion, rinse it under cold water, then finely chop it. Heat a frying pan and add a bit of vegetable oil. Add the chopped onion and sauté over low heat for 3–4 minutes until softened and slightly golden.

Grate the peeled potatoes using a coarse grater. If any juice forms, drain it off.

Do not let the grated potatoes sit too long to avoid darkening. Immediately mix them with the sautéed onion.

Add flour to the mixture. Season with salt and your favorite spices to taste. Mix all the ingredients well.
Step 6
Depending on how watery the potatoes are, you may need slightly more or less flour. The finished batter should be thick enough to hold shape.
Step 7
Spoon the potato mixture onto a preheated skillet with vegetable oil. Fry the pancakes for 3–4 minutes on each side. For crispy pancakes, fry uncovered; for softer ones, cover the pan.
Step 8
Once golden brown, remove the pancakes from the pan and place them on a plate.
Step 9
Serve the finished potato pancakes with onion and flour hot, with a side of sour cream. Enjoy!
