Potato Dumplings with Meat
Unusual, tasty, and filling, for both adults and children. Potato dumplings with meat are a great choice for a family lunch or dinner. They can be served with a fresh vegetable salad and favorite sauces. These meat-filled dumplings are especially delicious with onion fried in pork fat or butter.

Preparation
Step 1
How do you make potato dumplings with meat? First of all, prepare all the necessary ingredients. If you have a whole piece of meat, grind it into mince. The recipe used ready-made store-bought pork mince.
Step 2
Wash the potatoes under running water with a brush and peel them. Peel the onion. Wash the vegetables in clean water and dry them.
Step 3
Grate the potatoes on the finest grater. Chop 1 onion the same way. If desired, you can also chop the vegetables in a blender.
Step 4
Place the resulting mixture in portions into cheesecloth folded in several layers and squeeze out the juice well.
Step 5
Transfer the squeezed potato and onion mixture into a separate deep bowl.
Step 6
Crack the egg into the potato and onion mixture, add the sifted flour, a pinch of salt, and a little allspice or ground black pepper.
Step 7
Knead the dough, and if necessary add a little more flour. The consistency should not be very thick, but it should still be possible to shape it into a ball by hand. You may need a little less or more flour depending on its properties, so aim for the right dough consistency. Set the dough aside to rest, covering it with plastic wrap. Meanwhile, prepare the filling.

Take the minced meat and place it into a deep bowl. Cut the second onion as finely as possible with a knife and add it to the meat. Add salt and pepper to taste.

Mix everything thoroughly.

Grease clean hands with vegetable oil. This is needed so the potato mixture does not stick to your hands. Pinch off a small amount of dough and make a flat round piece from it. Put a little mince in the center.

Pinch the edges of the potato dough together from all sides.

Form a ball slightly larger than an apricot. Try to make sure there are no cracks in the balls, otherwise the dumplings may fall apart while boiling.

Shape dumplings this way from all the dough and mince. Grease your hands with oil from time to time.
Step 14
Bring water to a boil in a pot, add a bay leaf and just a little salt. It is better to use a larger pot so all the dumplings fit and do not stick together while boiling. Put the balls into the boiling water. After they float to the surface, reduce the heat slightly to medium and cook for another 30 minutes. Keep in mind that the dumplings should keep boiling the whole time; if they are not, increase the heat a little.

Remove the finished balls from the pot with a slotted spoon and place them in a single layer on a large flat dish. The dumplings are ready and can be served with sour cream or butter. Different sauces will also go well with them.

I suggest serving them with fried onion. For this, cut the pork fat into small pieces and render the fat from it in a frying pan.

Remove the cracklings, and add the finely chopped onion to the fat. Fry until golden. Instead of pork fat, you can use butter.

Add the fried onion to the dumplings, sprinkle with herbs and ground pepper. The dish is ready. Enjoy your meal!
