Potato and Tomato Casserole

Preparation
Step 1
Prepare the ingredients. Peel the potatoes beforehand and rinse them under running water. Choose ripe, firm and juicy tomatoes. Use any cheese you like. The original recipe uses 33% heavy cream, but 20% cream will also work.
Step 2
Cut the peeled potatoes into pieces and finely chop them in a food processor. You can also coarsely grate or finely dice the potatoes.
Step 3
The potatoes should have a finely chopped, slightly coarse texture. Transfer them to a large bowl.
Step 4
Immediately add the eggs and cream to the potatoes, as finely chopped potatoes darken quickly. Season with salt and your preferred spices; ground black pepper and a little paprika work well. Mix thoroughly.
Step 5
Peel and finely chop the onion. Remove the stems from the tomatoes and cut them into small cubes, reserving 2–3 round slices for decorating the top.
Step 6
Grease the bottom and sides of a nonstick or ceramic baking dish with vegetable oil. Spread half of the potato mixture evenly in the dish, lightly squeezing out some of the excess liquid as you add it.
Step 7
Spread the chopped onion evenly over the potato layer.
Step 8
Add an even layer of diced tomatoes. If desired, sprinkle a little grated cheese over them to help bind the layers and keep the finished casserole from falling apart.
Step 9
Cover with the remaining potato mixture and spread it evenly.
Step 10
Arrange the reserved tomato slices on top. Bake in an oven preheated to 350°F for approximately 50–60 minutes. Adjust the time according to your oven. About 5 minutes before the end of baking, sprinkle the casserole with grated cheese.
Step 11
Remove the finished casserole from the oven and serve hot.
