Pork with Mushrooms in Soy Sauce

Bright, incredibly delicious meat with forest mushrooms! Pork with mushrooms in soy sauce is perfect for a festive table or a family dinner. A great addition to boiled rice, Chinese noodles, and more!

Preparation
Step 1
Which mushrooms are best to use? Fresh forest mushrooms or frozen ones are great. I used frozen Polish mushrooms I picked in the forest in autumn.
Step 2
Put the mushrooms into a pot and pour in cold water. Place over high heat, skim off the white foam after boiling, then reduce to low heat and cook about 30 minutes. Drain through a colander and let sit to remove as much liquid as possible. If needed, lightly squeeze cooled mushrooms.
Step 3
Meanwhile, rinse the pork and pat dry with paper towels. Cut the meat into small, even pieces.
Step 4
Heat vegetable oil in a skillet. Add pork and fry, stirring occasionally. After 2-3 minutes, the meat will release juices. Reduce heat to medium and simmer uncovered for 5 minutes, then increase to high. Let all liquid evaporate, and the pork should brown with a golden crust.
Step 5
Add mushrooms to the pork. Fry together over slightly below medium heat for about 15 minutes. During cooking, cover with a lid for 5-7 minutes if needed. Stir occasionally to prevent sticking.
Step 6
In soy sauce, mix in brown sugar and cornstarch. Stir until sugar fully dissolves.
Step 7
Increase skillet heat, add spices to taste (I used a pinch of ground coriander, a little ground ginger, and dried garlic). Stir.
Step 8
Pour in the soy sauce mixture, stirring constantly.
Step 9
Keep mixing and cooking until the sauce thickens and coats each piece. Taste and add salt if necessary. Sprinkle finished dish with sesame seeds.
Step 10
Serve with fresh herbs in each portion - dill and green onion work great.
