Pork Stew with Tomato Paste

Preparation
Step 1
Choose pork without bones and with minimal fat. Tenderloin, pork loin, or ham work great.
Step 2
Cut the meat into pieces about the same size. Cut across the grain for tenderness. The smaller the pieces, the faster they cook. Heat a pan, carefully pour some sunflower oil, and gently add the meat. Fry on medium-high heat, stirring to brown evenly on all sides.
Step 3
Wash and peel the onion and carrot. Rinse off dirt. Chop the onion finely, and grate or slice the carrot as you like (round slices or sticks). Add onion and carrot to the pan with meat. Stir and fry for about 3-4 minutes over medium heat. Adjust timing to your stove. Vegetables will soften and release a nice aroma.
Step 4
In a separate glass, mix flour with tomato paste until smooth and lump-free.
Step 5
Pour the sauce into the pan. Add enough water to almost cover the meat. This will make more sauce but less thick. Add salt and spices to taste. Stir. Bring to a boil. Cover with a lid and simmer for about 40 minutes on medium heat until the meat is tender.
Step 6
Pork stew with tomato paste is ready! Serve with buckwheat, rice, pasta, or potatoes. Plate the dish and serve hot. Enjoy your meal!
