Preparation
Step 1
You can use pork from any part of the animal. It’s best to choose a leaner cut since the broth becomes rich enough during cooking. I’ll be using fresh champignons (button mushrooms), but you can use any mushrooms you prefer. Peel and rinse the vegetables.
Step 2
Cut the pork into small pieces. Preheat a skillet until hot, pour in a bit of vegetable oil, and add the pork. Sear it over high heat for just 2-3 minutes, until it changes color. Lightly salt and season the meat.
Step 3
Transfer the seared meat into ceramic baking pots. If you skip this searing step, the meat will stick together during baking and become unappetizing.
Step 4
Peel and rinse the onions and carrots. Grate the carrots using a coarse grater and finely chop the onions. In the same pan used for the meat, sauté the onions and carrots for a couple of minutes.
Step 5
Rinse the mushrooms thoroughly, pat them dry, and slice them. Add the sliced mushrooms to the skillet with the vegetables. Stir and sauté everything together for 3-5 minutes. Add a little salt. The mushrooms will shrink in size as they cook.
Step 6
Distribute the sautéed mushrooms, onions, and carrots over the pork in the pots. Then add diced potatoes on top. Pour a bit of water into each pot - do not fill it to the top, or it will boil over. Fill only up to half the pot.
Step 7
Cover the pots with lids and place them in a cold oven. Then set the oven to 350°F (180°C) and bake the pots for 1 hour. Don’t preheat the oven - sudden temperature change might crack the pots. This way, the pots warm up gradually.
Step 8
After an hour, turn off the oven and slightly open the oven door. Let the pots rest inside for 20-30 minutes to allow the flavors to blend. Serve the stew directly in the pots or plate the contents. Enjoy your meal!
