Advice
Because everyone’s taste for saltiness, sweetness, bitterness, spiciness, acidity, and heat varies, always add spices and seasonings to your taste! When using a spice for the first time, be careful not to add too much (like chili pepper).
Preparation
Step 1
Choose boneless pork. The best cut is the neck, but ham is also fine. Wash the pork under running water, pat dry, and cut into pieces, removing any sinews if present.
Step 2
Peel the onions and rinse in cold water. Slice into half-rings and crush with your hands. This softens the onion and helps it release juice faster, which better marinates the meat.
Step 3
Use a large bowl for marinating so it’s easy to mix. Put the prepared onion and pork pieces in the bowl and mix well.
Step 4
Pour mineral water over the meat. Add salt and spices to taste. Ground pepper alone can be enough. Mix and let marinate for 1 to 3 hours.
Step 5
Skewer the marinated meat on metal skewers. You can also grill it on a rack.
Step 6
Place the skewers over hot coals on the grill. There should be no flames, or the meat will burn. Cook, turning the skewers evenly until the meat is golden brown and appetizing.
Step 7
Serve the ready shashlik on skewers or on a plate. Complement with fresh vegetables or boiled potatoes. Enjoy your meal!
