Pork Heart in Pots with Potatoes in the Oven

Preparation
Step 1
You can use any vegetables you like. I used a standard set found in most homes. Any tomatoes work (cherry or regular), or you can skip them.

Rinse the pork heart and pat dry. Remove vessels, membranes, and fat. Cut into small, even pieces.

Peel potatoes, carrots, onion, and garlic. Cut pepper in half and remove seeds. Rinse all vegetables and pat dry.
Step 4
Cut the potatoes into small cubes or sticks.
Step 5
Heat vegetable oil in a skillet. Add meat pieces and fry over high heat, stirring, until browned (about 10 minutes). Transfer to a plate.
Step 6
In the same skillet, add diced onion, pepper, and carrot. Add more oil if needed.
Step 7
Sauté the vegetables for a while until softened.
Step 8
Prepare the pots by washing and drying them.

First layer: potatoes.

Next, add fried heart and sprinkle with chopped garlic.

Then add the sautéed vegetables.

Finally, top with roughly chopped tomatoes.

In a bowl, pour warm water. Add salt and spices to taste. Stir to dissolve. (I used coriander, mixed ground peppers, and dried garlic.) For 0.5 L pots, use about 150 ml (⅔ cup) of water each.

Pour water into pots, leaving about 2 cm (¾ inch) from the top. Cover with lids and bake. I baked at 220°C / 430°F (top-bottom mode) for about 1 hour.

Done! Serve hot, sprinkled with fresh herbs.
