Pork Goulash with Carrots and Onions

You can use other types of meat instead of pork in this dish. Just keep in mind that cooking time, flavor, and calorie content will vary. For example, beef takes longer to cook than pork, while chicken or turkey cooks faster.
Preparation
Step 1
You can use any boneless cut of pork. Tomatoes can be replaced with tomato paste.
Step 2
Rinse the meat under running water and pat dry with paper towels. Slice it into thin strips. Heat a frying pan over high heat and add a bit of vegetable oil. Add the meat and fry for 7-10 minutes until browned. At first, it will release moisture, but it will evaporate and allow the meat to brown.

While the meat cooks, peel the onion, rinse it with cold water, and slice into half rings or smaller.

Sprinkle the meat with a bit of flour and mix.

Add the onion to the pan, and after a couple of minutes, add grated carrots. Sauté everything together for 2–3 minutes more.

Cut out the tomato stems and dice the tomatoes into small cubes.

Add the diced tomatoes to the pan. Cook for another 3–5 minutes. Tomato paste can be used instead of fresh tomatoes.
Step 8
The tomatoes will release their juice and become soft. Add salt and your preferred meat spices—e.g., ground pepper or paprika.

Pour in hot water (about 1/2 to 3/4 cup or 120–180 ml), stir, cover the pan with a lid, and simmer on low heat for 20–30 minutes until the meat is tender.

The pork goulash is ready! Serve it with mashed potatoes, rice, or pasta. Enjoy!
