Preparation
Step 1
For this recipe you can use pork belly or any other cut, depending on your preference. I use pork belly with layers of meat and ribs. First wash it well and dry it thoroughly with paper towels. Then cut it into small long pieces that will later be easy to slice for serving.
Step 2
Prepare the necessary spices. Peel the garlic and cut each clove lengthwise into 2 pieces.
Step 3
We will cook it in a heatproof dish with a tight-fitting lid. I use a regular enamel pot with high sides. Place a bay leaf, garlic, a sprig of rosemary, and a few black peppercorns on the bottom. Arrange the pork belly on top so that there are gaps between the pieces. Add more spices on top, then another layer of pork belly. Place the remaining spices on top. If you like dishes with hot pepper, you can add that as well.
Step 4
Carefully pour soy sauce over the pork belly arranged in the pot. It is best to use high-quality soy sauce. The flavor of the pork belly will depend on it. There is no need to add any salt at all. The pork belly will get all the salt it needs from the soy sauce. Water is not needed either. There is enough liquid in the soy sauce and in the pork belly itself.
Step 5
Preheat the oven to 220°C (425°F).
Step 6
Cover the pot with a lid and place it in the preheated oven. In my oven, the cooking time is 1 hour.
