Pollock with Cheese in the Oven

Appetizing and juicy, simply fantastic! Impossible to resist! Pollock with cheese in the oven is perfect for a family lunch or dinner. This tender fish in a creamy milk sauce with a delicious cheese crust won’t leave anyone indifferent. Serve with any side dish. This recipe also works with other types of fish.

Preparation
Step 1
You can use fresh or frozen pollock. If frozen, defrost it by moving it from the freezer to the lower shelf of the fridge. You can also use skin-on boneless fillets or pressed fish blocks instead of whole fish.
Step 2
Clean the fish from guts and scales, remove fins, and rinse thoroughly. Cut into serving-size pieces.
Step 3
Sprinkle the fish with salt and a mix of ground peppers.
Step 4
While the fish marinates, prepare the sauce. Any type of milk works. If you want more sauce, increase the ingredient quantities proportionally.
Step 5
Grate the cheese using a coarse grater. Any cheese is suitable — hard or semi-hard — as long as it’s flavorful, high-quality, contains no artificial fats, and melts well.
Step 6
Melt butter in a skillet over low heat.
Step 7
Add flour and stir quickly until smooth. While stirring constantly, pour in warm milk. Bring the sauce to a boil and simmer over low heat until it thickens.
Step 8
Add half the grated cheese and fish seasoning to the sauce. Stir thoroughly until the cheese melts. Remove from heat. If you’re using pre-made spice blends, check the label — many contain salt and pepper already, so adjust seasoning accordingly to avoid over-salting or over-peppering.
Step 9
Place the marinated fish into a greased baking dish.
Step 10
Pour the creamy cheese sauce over the fish. Sprinkle the remaining grated cheese on top. Bake in a preheated oven at 350°F (180°C) for 20–25 minutes until a golden crust forms.

Serve the baked pollock with cheese, garnished with cherry tomatoes and basil. Enjoy your meal!
