Preparation
Step 1
Prepare the ingredients. You can use any type of meat, such as veal, chicken or pork.
Step 2
Rinse the pearl barley several times in cold water. Cover with clean water and leave to soak for several hours, preferably overnight. Before cooking, rinse once more and add to boiling water. Cook over low heat for about 1 hour, until the barley is tender. Season with a little salt.
Step 3
Cut the meat into small pieces. Heat a frying pan, add the vegetable oil and cook the meat for 5–7 minutes, until it begins to brown.
Step 4
While the meat is cooking, prepare the vegetables. Peel the onion and carrot. Chop the onion and coarsely grate the carrot.
Step 5
Add the onion and carrot to the meat and mix. Cook everything together for another 2–3 minutes. Pour in hot water and simmer over low heat for 30–40 minutes, until the meat is tender. For extra aroma, add a bay leaf or a little celery root if desired. Season with salt and spices to taste, such as ground black pepper and paprika.
Step 6
Once the pearl barley is cooked, drain it in a colander and let the excess water run off.
Step 7
Add the cooked pearl barley to the pan with the meat and mix well. Heat everything together for a couple of minutes, then remove from the heat.
Step 8
Divide the pearl barley with meat between plates and serve hot.
