Pea Soup with Potatoes

Preparation
Step 1
I am using split peas, which don’t require soaking. If you have regular peas, soak them in cold water the night before. Check the package for cooking time.
Step 2
Rinse the required amount of peas several times in cold water. Then cover with fresh water, bring to a boil, and simmer on low for about an hour.
Step 3
While the peas cook, make croutons. Cut a loaf into cubes and fry on low heat for 5-7 minutes until lightly browned. You can lightly salt them.
Step 4
Peel and rinse the potatoes. Cut into small pieces and add to the pot with the peas. Cook for another 10 minutes.
Step 5
Peel and chop the carrot and onion. Grate the carrot and finely chop the onion. Heat a little vegetable oil in a skillet and fry the vegetables for 3-4 minutes.
Step 6
Add the sautéed vegetables to the soup. Season with a little salt and spices to taste. Simmer together for 5-7 minutes, then remove from heat. Serve hot.
Step 7
This delicious pea soup can be served with salted lard or croutons. Enjoy!
