Pasta with Chanterelles in Cream Sauce

Preparation
Step 1
How to make the pasta? Prepare the ingredients. Clean fresh chanterelles from any debris and rinse well. If the mushrooms are large, cut them into 2-3 pieces. Boil the mushrooms in boiling water for 10-15 minutes. Drain, then rinse the mushrooms again. You can use any type of pasta; you can also use spaghetti.
Step 2
Peel the onion and rinse it in cold water. Finely chop it.
Step 3
Heat a frying pan until hot and add the chopped onion and the boiled mushrooms. Sauté for 5-7 minutes, until all excess moisture evaporates.
Step 4
Meanwhile, cook the pasta in a separate pot according to the package instructions. Drain in a colander to remove excess water.
Step 5
Add the cream to the chanterelles and bring to a boil. For a thicker sauce, use heavy cream with at least 33% fat. If your cream has a lower fat content, thicken the sauce by mixing cold cream with a small amount of flour, then adding it to the pan.
Step 6
Add the pasta to the hot chanterelle sauce and mix well. Plate and serve hot.
Step 7
If you like, sprinkle with chopped herbs when serving. Serve with a fresh vegetable salad. Enjoy!
