Pancakes with Sausage and Cheese

Preparation
Step 1
Milk, water, and eggs should be at room temperature for the best batter. Remove them from the fridge 1-2 hours in advance.
Step 2
Wash the eggs with soap. In a deep bowl, beat the eggs with sugar and salt - no need to whisk until foamy. Then add the milk and mix until smooth.
Step 3
Sift the flour to enrich it with oxygen - this makes the pancakes light. Transfer more than half of the flour to a large bowl, add baking soda, and mix. Make a well in the center and pour in the egg-milk mixture. Stir with a whisk until smooth. Gradually add the remaining flour until the batter becomes thick.
Step 4
You should have a smooth, thick batter. Thin it with water until you reach the desired consistency - similar to heavy cream. Depending on your flour, you might need more or less than stated.
Step 5
Let the batter rest for 10-15 minutes. If it becomes too thin, add a bit of flour.
Step 6
Prepare the filling. Choose cheese that melts well. Use any cooked sausage that can be easily grated. You can omit bell pepper, but it adds a pleasant freshness.
Step 7
Grate the cheese and sausage coarsely - it makes the filling soft and uniform.
Step 8
Wash the bell pepper, remove the stem and seeds, and slice it lengthwise into thin strips. You should get about 24 pieces.
Step 9
Heat a 9-inch (22 cm) frying pan until hot, grease with oil, and pour a small amount of batter. Swirl to spread evenly. Cook on medium heat until golden on one side; the other side should stay light. Oil the pan as needed.
Step 10
You’ll get about 14 pancakes. To fill, place a pancake browned-side up. Lay two strips of pepper on one edge.
Step 11
Fold the edge over the pepper, then add about 1 tablespoon of filling halfway across, fold in the sides, and press lightly.
Step 12
Roll the pancake tightly.

Repeat with all pancakes.
Step 14
Fry the filled pancakes in butter on both sides over medium heat until golden and crisp. The filling should warm up, melting the cheese inside.
