Pan-Fried Pork Pieces

Prepare all the required ingredients.

Rinse the pork and pat it thoroughly dry with paper towels. Cut the meat across the grain into approximately 1¼-inch cubes. Pieces of this size cook evenly: smaller ones may dry out, while larger ones may not cook through in the specified time. Cutting across the grain will help keep the pork tender.
Step 3
Place the pork in a bowl and add the seasonings. A dry spicy seasoning blend and black pepper work well, but you can use any spices you like. Adjust the amount according to their flavor and heat. Mix thoroughly so the meat is evenly coated.

Pour half of the vegetable oil over the pork and mix well.

Pour the remaining oil into a frying pan and heat it over high heat. Carefully add the pork, as the hot oil may splatter. Fry over high heat for 8 minutes, stirring regularly. Mix the vinegar with the water and pour it into the pan.

Cook the pork over medium heat until all the liquid has evaporated.

Peel and rinse the onion, then cut it into thin quarter-rings. Add it to the pork.

Rinse the parsley and dill, shake off the excess water and chop them.

Mix the pork with the onion and herbs. Cover the pan and cook over low heat for 2 minutes.

Remove the lid, stir once more and take the pan off the heat.

Divide the pan-fried pork among plates and serve.
