Pan-Fried Pork Neck

Preparation
Step 1
Use vegetable oil, either olive or sunflower. Sunflower gives a milder crust flavor, olive a slight bitterness. Add spices to taste.
Step 2
Remove the pork neck from the fridge at least 1 hour before cooking for even internal temperature. Wash and pat dry. Slice across the grain about 0.4-0.6 in (1–1.5 cm) thick.
Step 3
Drizzle pork slices with lemon juice, sprinkle with pork spices, salt, and pepper. Marinate 20 minutes at room temperature. Blot before frying.
Step 4
Heat oil in a heavy-bottomed skillet over medium heat. Fry pork about 5 minutes per side, adjusting for thickness and desired doneness. Grill pan gives a nice pattern.
Step 5
Remove skillet from heat, cover, and let pork rest 10 minutes for juices to redistribute.
Step 6
Serve hot with any side dish. Enjoy!
