Preparation
Step 1
Prepare the ingredients. Choose any spices you like; a ready-made fish seasoning blend works well.
Step 2
Prepare the mackerel by removing the head and tail. Cut open the belly, remove the innards and carefully scrape away the dark membrane inside. Pat the fish thoroughly dry with paper towels and cut into pieces about ¾–1¼ inches thick.
Step 3
In a separate bowl, combine the flour with salt and spices. Coat each piece of fish thoroughly in the seasoned flour.
Step 4
Peel the onion and cut it into half-rings or slightly smaller pieces.
Step 5
Heat a little vegetable oil in a frying pan. Add the floured mackerel and cook for 2–3 minutes on each side, until lightly golden.
Step 6
Add the sliced onion to the pan and distribute it evenly between the pieces of fish. Cook the fish and onion together for another couple of minutes.
Step 7
Cover the pan and cook for another 2–3 minutes, until the onion is tender and the fish is cooked through.
Step 8
Transfer the mackerel and onions to plates and serve hot, with fresh vegetables if desired.
