Pan-Fried Cottage Cheese Pancakes (Syrniki) with Flour

Step 1
How do you make syrniki from cottage cheese in a skillet? Measure the ingredients. Cottage cheese can be any fat content. Vanilla sugar can be replaced with vanilla.

It’s very important to choose the right cottage cheese. It shouldn’t be wet; otherwise you’ll need extra flour, which makes the dough tight and dense. For the same reason, don’t use soft, paste-like cottage cheese - it won’t work for syrniki. If the curd is grainy or in flakes, blend it to make it smooth - then the syrniki will be tender. You can use block-style cottage cheese.
Step 3
Put the cottage cheese into a bowl. Add salt, sugar, and vanilla sugar, and mix. Adjust the sugar to taste.

Add the beaten egg and mix well.
Step 5
Sift in the flour and mix thoroughly. If the dough is too sticky/thick, add just a tiny bit more flour (about 1/2 Tbsp, no more).

Let the cottage-cheese dough rest on the counter for 15 minutes. The gluten will relax, and the syrniki will be easier to shape.

Lightly flour the work surface and roll the dough into a log. Divide into equal pieces depending on how big you want the syrniki.

Roll each piece into a ball, then press to form a round, medium-thick patty. If the dough sticks to your hands, dust them with flour.

Heat vegetable oil in a skillet and add the syrniki. Fry over medium heat until golden.

When browned, flip and cook on low heat until done.

Serve syrniki with sour cream and any sweet add-ons: jam, preserves, or sweetened condensed milk. Enjoy!
