Step 1
Prepare the ingredients. Lean meat is best for these pork chops. Boneless pork loin is an ideal choice because its shape makes it easy to cut into even portions. Slice the pork into pieces ½–¾ inch thick.

Cover a piece of meat with plastic wrap and pound it well on both sides with a meat mallet. The plastic wrap prevents the edges from tearing and keeps meat juices from splattering around the kitchen.

Prepare two shallow bowls. Crack the eggs into one and pour the breadcrumbs into the other.

Add salt and spices to the eggs. Lightly whisk everything together with a whisk or fork.

Dip each piece of pounded meat first into the egg mixture, then coat it thoroughly in the breadcrumbs.

Heat a frying pan over high heat and add a little vegetable oil. To check whether the oil is hot enough, dip the end of a wooden spatula into it. If bubbles form around the spatula, the oil is ready. Place the breaded pork chops in the pan and fry over high heat for 1 minute on each side. This quickly sets the coating into a crust and helps keep the meat juices inside.
Step 7
Reduce the heat and cook the pork chops for another 4–5 minutes on each side, allowing the meat to cook through. Do not cover the pan, as the chops need to remain crisp on the outside. Arrange the cooked pork chops on plates and serve.
