Oven-Baked Zucchini with Minced Meat and Cheese
If you’re using large, mature zucchini, place the halved, hollowed pieces in the microwave for 1-2 minutes, or dip them in boiling water. This helps them cook through along with the other ingredients. Young zucchini can be baked right away - they cook very quickly.

Step 1
How to bake zucchini rounds with minced meat and cheese in the oven? Prepare the ingredients. Choose young, small zucchini - these have tender skin and the core with seeds isn’t mature yet. You can use store-bought mince or make your own by grinding meat. Any meat works; I used pork and beef. Thaw frozen mince.
Step 2
Peel the onion and garlic and rinse in cold water. For the mince, the onion can be ground through a meat grinder, chopped in a processor, or simply finely diced. Mix the chopped onion and garlic with the minced meat. Add a little salt and spices.
Step 3
Cut the zucchini into short cylinders 4-6 cm (1½-2⅓ in) tall. Make a hollow in the center by removing the core. Don’t cut all the way through - leave a small bottom. It’s convenient to scoop out the core with a teaspoon.
Step 4
Use any oven-safe dish - glass, ceramic, or metal. Lightly grease the bottom and sides with vegetable oil and arrange the prepared zucchini pieces. Fill each zucchini with the minced meat mixture and press it in firmly.
Step 5
Spread sour cream over the mince on top.
Step 6
Wash and pat dry the tomatoes, then slice into rounds. Place one tomato slice on each zucchini piece.
Step 7
Grate the cheese finely and sprinkle over all the zucchini. Bake in a preheated oven at 180°C / 356°F for 30 minutes. Time and temperature are approximate - adjust to your oven.
Step 8
During baking, the zucchini will release juice, which will evaporate, and the zucchini will become soft. The cheese will melt and lightly brown. Remove the dish from the oven and transfer the zucchini to a plate. They’re especially tasty served hot. Enjoy!
