Preparation
Step 1
How do you make zucchini with ground meat and tomatoes in the oven? Prepare the ingredients. You can use any type of ground meat or a mix. I’m using pork. Rinse the zucchini and tomatoes under running water.
Step 2
Choose young zucchini: the skin is thin (no need to peel) and the seeds don’t need removing. Trim the ends and slice into 1-1.5 cm (0.4-0.6 in) rounds. Don’t slice too thin - zucchini becomes very soft when baked.
Step 3
Pre-fry the ground meat with onion in butter. This helps match cooking times: zucchini and tomatoes bake quickly, while the meat needs a bit longer. Peel and finely chop the onion. Sauté for a couple of minutes, then add the ground meat and cook together for about 10 minutes. Salt lightly and add spices to taste.
Step 4
Use any oven-safe baking dish: glass, metal, or ceramic. Lightly grease the bottom and sides with oil and arrange the zucchini rounds.
Step 5
Spoon a little of the cooked ground-meat filling onto each zucchini round. For extra aroma, you can add a little chopped garlic.
Step 6
Slice the tomatoes into rounds and place one tomato slice on top of each zucchini round.
Step 7
Grate the cheese and sprinkle it over each tomato slice. Bake in a preheated oven at 180°C (356°F) for 20-25 minutes. Adjust to your oven.
Step 8
As it bakes, the zucchini will soften and start to brown slightly. A bit of juice will release, and the cheese will melt and lightly brown. Remove the dish from the oven, transfer the zucchini to a serving plate, and serve.
Step 9
Delicious, juicy, and aromatic zucchini with tomatoes and ground meat is ready. Enjoy!
