Oven-Baked Zander Fillet in Sour Cream
Incredibly tasty, juicy, and light - everyday feels like a celebration! Zander fillet in sour cream baked in the oven suits people of any age. It’s very easy to make and turns out exceptionally delicious. Serve it as is or with a side dish and a fresh vegetable salad.

Preparation
Step 1
How to bake zander fillet in sour cream? Prepare the ingredients. Ideally, use ready-made zander fillet. If you have a whole fish, clean it: remove the head and fins, gut it, and remove the backbone and ribs. Choose the fattiest sour cream so it won’t run off the fish later.
Step 2
Cut the fish into serving pieces, lightly salt, and sprinkle with spices. Rub the spices in a little and let the fish rest briefly.
Step 3
Peel the onion and rinse in cold water. Cut the onion into pieces and sauté for 2-3 minutes with a small amount of vegetable oil. The onion will turn translucent. Stir so it doesn’t burn.
Step 4
For baking, I’m using a ceramic dish. Spread the sautéed onion evenly over the bottom.
Step 5
Place the prepared fish on the onion “bed” skin-side up.
Step 6
Generously spread sour cream over the fish. Bake in a preheated oven at 190°C / 374°F for 30-40 minutes.
Step 7
While the zander bakes, prepare the cheese: grate it finely.
Step 8
10-15 minutes before the end of baking, take the dish out, sprinkle the fish with grated cheese, and return it to the oven.
Step 9
The cheese will melt completely. If you keep it in a bit longer, it will also brown. Remove the baked zander fillet from the oven and transfer to a plate.
