Step 1
Prepare the ingredients. Which cut of pork is best for chops? Pork loin works well because it’s easy to slice into portions. Choose a cheese that grates easily and melts well. Wash the tomatoes. Preheat the oven to 180°C / 356°F.

Slice the pork into portion pieces and lightly pound with a meat mallet.
Step 3
In a separate bowl, combine the eggs and flour. Whisk until smooth with no flour lumps. The batter should be thick enough to cling to the meat. If it’s too runny, add a bit more flour.

Heat vegetable oil in a skillet. Dip each pork piece into the egg batter and place in the hot oiled skillet. Fry for about 1 minute per side.
Step 5
Transfer the seared meat to a baking sheet lined with parchment. Spread sour cream over the meat and sprinkle lightly with salt and spices. You can use dried garlic and a little paprika. Slice the tomatoes into rounds and place them on each chop. Finely grate the cheese and sprinkle over the top.
Step 6
Bake the chops for 15-20 minutes at 180°C / 356°F. The meat will finish cooking (it was lightly fried first). Some juices will release during baking. The cheese will melt and lightly brown. Exact time depends on your oven.

Remove the finished chops from the oven and plate them. Add fresh vegetables and serve. Enjoy!
