Oven-Baked Pork and Rice in a Roasting Bag
Aromatic, fluffy and full of flavor! This pork and rice dish is cooked in a roasting bag, so it requires very little hands-on preparation. The rice turns out fluffy, while the meat remains tender and juicy.

Preparation
Step 1
Prepare all the required ingredients.
Step 2
Prepare the spices. You can use a ready-made seasoning blend for rice dishes, but check whether it already contains salt and hot pepper so you can season the dish accurately.
Step 3
Rinse the rice thoroughly in cold water, then drain and leave it to dry slightly.
Step 4
Peel and rinse the onion. Scrub the carrot under running water and cut it into large pieces. You can use another cutting style if preferred.
Step 5
Rinse the pork under running water, pat it dry and cut it into medium cubes. A cut with a little fat, such as pork leg or tenderloin, works well.
Step 6
Heat the vegetable oil in a frying pan. Add the pork and brown it on all sides until golden.
Step 7
Combine the rice, browned pork, carrot, seasoning blend, turmeric, paprika, barberries and salt in a deep bowl.
Step 8
Mix thoroughly so the spices are distributed evenly over the rice and meat.
Step 9
Transfer the prepared mixture to a roasting bag approximately 28 inches long.
Step 10
Add the whole onion and the rinsed heads of garlic. You can dice the onion instead, although leaving it whole will add aroma without mixing it throughout the dish.
Step 11
Place the roasting bag in a baking dish and tie one end securely. Pour the water into the bag, then tie the other end. Make several small holes in the top with a toothpick so steam can escape during baking. Without these openings, the bag may swell excessively or burst.
Step 12
Bake in an oven preheated to 340°F for 45–50 minutes. Carefully cut the bag open along the top and fold back the edges. Return the dish to the oven for another 7–10 minutes. Adjust the time according to your oven.
Step 13
Remove the dish from the oven. The rice should be fluffy and the pork tender. Mix gently before serving.
