Step 1
How do you bake mackerel with onion and carrot in the oven? Prepare all the necessary ingredients. Use large carrots and onions. When choosing mackerel, make sure the fish has no damage and does not have too much ice glaze. If the fish is large, use 2 for this amount of ingredients. Go by the weight indicated in the recipe. Any neutral oil will work.

Peel and rinse the onion and carrot. Grate the carrot on a coarse grater. Cut the onion into small cubes. This way, the vegetables will cook faster and the filling will be more even.

For frying, use a pan large enough to hold both the carrot and the onion. Heat the pan and pour in the vegetable oil. Since carrots take longer to cook than onion, first fry the grated carrot over medium heat, stirring occasionally, for 1-2 minutes.

When the carrot starts to soften, add the chopped onion to the pan and fry for another 2-3 minutes over medium heat. Stir regularly so the vegetables cook evenly and do not dry out. Add a little salt and mix. Remove from the heat and let cool completely.

Prepare the mackerel. You do not need to thaw it fully in advance, it can be taken out of the freezer right before cooking. Slightly frozen fish is easier to clean. Remove the innards and rinse well under running water. Be sure to remove the dark membrane, as it gives the fish bitterness. Preheat the oven to 200°C (about 400°F).

Carefully cut each fish lengthwise, remove the backbone and all the bones. Pat the fillets dry with paper towels so the fish does not become watery from excess moisture. Use a large baking sheet for baking. Line it with foil and arrange the fish evenly on it.

Lightly salt each fish and season with dry spices. If you are using a ready-made spice mix that already contains salt, reduce the amount of added salt. Otherwise, the dish may become too salty and the flavor may be spoiled.

Spread a thin layer of mayonnaise or sour cream over the fish.
Step 9
Divide the cooled vegetable filling according to the number of mackerel pieces and spread it evenly over the fish. Place the baking sheet on the middle rack of the oven. After 20-25 minutes, the dish will be ready. The cooking time may vary depending on your oven. Enjoy your meal!
