Preparation
Step 1
How do you make bream in foil in the oven? Choose a medium-size fish (under 1 kg / 2.2 lb). Such bream tastes better than an overly large one. Also, for a large fish you’d need a suitable baking dish. It’s best to buy chilled bream, because with frozen fish it’s hard to judge freshness and quality. The bream should have clear eyes and a neutral smell.
Step 2
If the bream is frozen, thaw it ahead of time. Remove the packaging and place it in a container on the bottom shelf of the refrigerator 6 hours before cooking. Remove the scales. Make a lengthwise cut along the belly and remove the innards. Cut off the fins and remove the gills. Then rinse the bream well under running water. Pat dry with paper towels to remove excess moisture.
Step 3
Preheat the oven to 200°C / 392°F. Rinse the lemon well under running water. Squeeze the juice of half the lemon into a small deep bowl. Peel the garlic, rinse it, pat dry, and chop with a knife. Add the garlic, olive oil, salt, and spices to taste to the lemon juice. Don’t overdo the spices so they don’t overpower the fish. Mix well.
Step 4
Rub the bream with the marinade, outside and inside. Put the garlic inside the bream’s belly cavity.
Step 5
Slice the remaining half lemon into thin rounds. Prepare a baking dish and foil (you can use a baking sheet).
Step 6
Line the dish with baking foil, leaving extra foil over the edges. Lay the fish on it. Place a few lemon slices on top and put the rest inside the fish.
Step 7
Wrap the bream in foil, leaving a small opening on top for steam to escape. If needed, wrap with a second layer of foil. Place in the preheated oven. Bake at 200°C / 392°F for about 20-30 minutes, depending on the fish size and your oven. About 5 minutes before it’s done, open the foil on top and return to the oven so the bream can brown.
