Oat Flour Pancakes with Milk

Preparation
Step 1
Prepare the ingredients. Ideally, all ingredients should be at room temperature, so take them out of the refrigerator 1-2 hours ahead. Use milk of any fat content to your taste. Vegetable oil can be any kind as well.
Step 2
In a deep bowl, combine the raw eggs, sugar, and salt. Beat thoroughly with a mixer or whisk until you get a fluffy, uniform mixture.
Step 3
Be sure to sift the oat flour. First, it may contain larger particles; second, sifting aerates the flour, making the pancakes more tender and light. Note: oats are gluten-free by nature, but hidden gluten can be present if oats were grown or processed alongside wheat. If strict gluten-free is important to you, choose oats labeled accordingly.
Step 4
Add the flour to the beaten eggs. Mix until smooth. You should get a thick, uniform batter. Keep in mind you may need more or less flour than I did - go by the batter consistency.
Step 5
Add the milk in portions, mixing well after each addition. Adding it gradually prevents lumps. Pour in the vegetable oil and whisk until smooth. Let the batter rest for about 10 minutes.
Step 6
During this time, the gluten-like proteins in the oat flour will hydrate, which helps the pancakes stay elastic and not tear when flipping. Keep in mind oat flour has much less gluten structure than wheat flour, so cooking these pancakes takes a bit of practice.
Step 7
Heat the pan well and cook the pancakes until golden, about 2-3 minutes per side. Since the batter already contains oil, you may only need to grease the pan before the first pancake. However, it depends on your pan, so adjust as needed and grease again if necessary.
Step 8
Stack the cooked pancakes on top of each other. If you like, spread them with butter - this makes them richer and juicier. Optionally, make a cottage cheese filling: mash cottage cheese with a fork and mix with eggs, sugar, vanilla sugar, and a pinch of salt until smooth. Enjoy!
