No-Bake Mandarin Cottage Cheese Mousse
This light cottage cheese mousse with mandarins is quick and easy to prepare, making it especially convenient for a festive table. Prepare it in advance and leave it in the refrigerator until serving.

Preparation
Step 1
Prepare the ingredients. Soft cottage cheese works best. If using a firmer, grainier cottage cheese, blend it for longer to achieve a smooth consistency.
Step 2
Peel the mandarins and separate them into segments. For a more delicate dessert, remove the membranes from the segments. If the membranes are very thin, you can leave them on. Keep the segments whole or cut them into smaller pieces so they are distributed more evenly throughout the dessert. The mandarins can be prepared in advance, covered and refrigerated.
Step 3
Combine 1 oz of instant gelatin with 1½ cups of cold boiled water. Leave it to bloom.
Step 4
Blend the cottage cheese until smooth.
Step 5
Add the sweetened condensed milk and blend again until completely smooth.
Step 6
Gently heat the bloomed gelatin without allowing it to boil. Stir until completely dissolved, then leave it to cool slightly. Pour it into the cottage cheese mixture in a thin stream, stirring constantly with a spatula. If using another type of gelatin, strain it through a fine sieve if necessary.
Step 7
Add the mandarin segments and any juice they have released. Mix gently and pour into a mold. A silicone or metal loaf pan works well. Line the mold with plastic wrap to make the dessert easier to remove. Alternatively, divide the mixture among individual dessert glasses.
Step 8
Cover and refrigerate for 2–4 hours, or until completely set. The exact setting time will depend on the size and shape of the mold. The dessert can also be left in the refrigerator overnight.
Step 9
Turn the set dessert onto a serving plate, carefully remove the mold and peel away the plastic wrap. Decorate with grated chocolate, fresh mandarin segments or another topping of your choice. Serve chilled.
