Preparation
Step 1
Take natural, high-quality, tasty cottage cheese - not grainy if possible. Fat content can be any. Natural yogurt without additives can be used instead of sour cream.
Step 2
Pour gelatin into clean, room-temperature water. Stir and leave for 15 minutes to swell. For quick-set gelatin, less time is needed.
Step 3
Place cottage cheese in a bowl. Add sour cream, sugar, and vanilla sugar (or extract). Adjust sugar to taste.
Step 4
Blend all ingredients with an immersion blender until smooth and lump-free.
Step 5
Melt the swollen gelatin carefully. On stove, heat gently without boiling, or use microwave in 10-second pulses. Add 2 tablespoons of the cottage cheese mixture to the hot gelatin and mix, then pour into the main mixture. This cools gelatin quickly without affecting other ingredients.
Step 6
Mix the cottage cheese mass well. Add berries or fruits (any kind). Cut large fruits into pieces and mix gently.
Step 7
Take a dessert mold (glass, ceramic, metal, or silicone). Line it with plastic wrap. Pour in the mixture, fold the edges of the wrap over the top. Chill in the fridge for at least 2 hours, preferably overnight.
Step 8
Remove the dessert from the fridge, invert onto a plate, remove plastic wrap, and serve with fresh berries or syrup. Enjoy!
