Preparation
Step 1
Prepare the ingredients. You can use shortbread, sugar cookies, plain biscuits or even oatmeal cookies, as long as they crumble easily. Choose ripe, aromatic bananas and small seedless mandarins.
Step 2
First prepare the base. Crush the cookies into medium-fine crumbs using a meat grinder, blender or rolling pin. Do not grind them completely into powder; a few small crumbs will help the base hold its shape better.
Step 3
Peel the bananas and place them in a bowl. Blend with an immersion blender until smooth. You can also mash them with a fork or potato masher.
Step 4
Sift the cocoa powder into the banana puree and mix well.
Step 5
Add the cookie crumbs to the banana mixture and mix thoroughly with a spoon until evenly combined. If the mixture is too soft, add a little more crushed cookie; the exact amount will depend on the size and ripeness of the bananas.
Step 6
Prepare the filling. Place the cottage cheese in another bowl and add the softened butter. Coconut oil can be used instead of butter. Add the sugar, or replace it with honey if desired, then blend until smooth and spreadable. If using very soft cottage cheese, simply mix or beat it with an electric mixer.
Step 7
To shape the roll, place a sheet of parchment paper on the work surface and cover it with plastic wrap. Spoon the cookie mixture onto the plastic wrap and roll it into a rectangular layer about ⅜ inch thick. Adjust the size according to the number and size of the mandarins.
Step 8
Spread the cottage cheese filling evenly over the cookie layer.
Step 9
Peel the mandarins and arrange them along one edge of the rectangle, leaving a small border. Lay them on their sides so they create an attractive cross-section when sliced.
Step 10
Carefully roll the layered mixture into a log. Wrap it first in plastic wrap and then in parchment paper. Refrigerate for 2 hours to firm up.
Step 11
Slice the chilled roll into portions and serve. For the most attractive slices, cut through the centers of the mandarins.
