Moldovan Cottage Cheese-Filled Flatbreads
Made from simple, inexpensive ingredients and wonderfully delicious! These traditional Moldovan flatbreads are filled with cottage cheese, eggs and fresh herbs, then fried in a pan until golden. Prepare them in advance for breakfast, dinner or a filling snack to take to work or on a walk.

Preparation
Step 1
Prepare the ingredients for the dough. Use refined, neutral-flavored vegetable oil and 9% white vinegar. Sift the flour beforehand to remove any impurities and aerate it, which will help make the dough lighter.
Step 2
Pour the drinking water, vegetable oil and vinegar into a large mixing bowl. Add the salt and whisk everything together.
Step 3
Add the sifted flour to the liquid ingredients. Knead until the dough is smooth, even and no longer sticky. You may need slightly more or less flour than specified, so judge by the consistency of the dough rather than the exact amount.
Step 4
Shape the dough into a ball, cover it with a kitchen towel and leave it to rest for 15 minutes. During this time, the flour will absorb the liquid and the gluten will develop, making the dough more elastic and easier to work with.
Step 5
Prepare the filling ingredients. Choose cottage cheese that is neither too dry nor too grainy. Any fat percentage will work. Use your preferred fresh herbs, such as parsley and dill, and season the filling with spices to taste.
Step 6
Place the eggs in cold water and bring them to a gentle boil. Cook for 9 minutes from the moment the water begins boiling. Transfer the eggs to cold water and leave them to cool, then peel and chop them finely. You can also grate them coarsely.
Step 7
Rinse the herbs, dry them thoroughly and chop them finely.
Step 8
Combine the cottage cheese, chopped eggs and herbs in a bowl. Season with salt and pepper.

Mix thoroughly until the filling is evenly combined.
Step 10
Divide the rested dough into 4 equal pieces.
Step 11
Roll each piece into a circle as thinly as possible. Dust the work surface and rolling pin well with flour to prevent the dough from sticking and tearing.
Step 12
Spread the filling in a thin, even layer over the center of the rolled dough. Fold the edges inward to form a square parcel and pinch the seams firmly closed. Press the flatbread gently with your hands so the edges seal well and the filling spreads evenly inside.
Step 13
Heat vegetable oil in a frying pan over medium-low heat. Place the flatbreads seam-side down and fry until golden. Turn them over and cook the other side until evenly browned.
Step 14
Serve the golden cottage cheese-filled flatbreads warm.
