Mini doughnuts in sugar

- dessert spoon - 10 ml
- tablespoon - 20 ml

Preparation
Step 1
To make the doughnuts, place the flour, sugar, baking powder, cinnamon, and salt in a bowl and mix thoroughly. In a separate bowl, whisk together the egg, 4 tablespoons of water, and 1 tablespoon of oil. Add this mixture to the dry ingredients and beat with a wooden spoon until you have a smooth, thick dough.
Step 2
Heat the oil to 170C in a large, wide saucepan or deep-fat fryer, checking the temperature with a cooking thermometer. (CAUTION: hot oil can be dangerous. Do not leave unattended.)
Step 3
For the cinnamon sugar topping, combine the cinnamon and sugar in a bowl and set aside.
Step 4
Rub your hands lightly with oil and roll the dough into 12 small balls. Using a greased spoon, carefully lower each dough ball - one at a time - into the hot oil. Fry in two batches for about 4 minutes per batch, turning every minute to ensure even cooking.
Step 5
Once cooked, lift the doughnuts from the oil using a slotted spoon, drain briefly, and toss in the cinnamon sugar to coat. Serve warm.
