Millet Porridge with Pumpkin in a Pot
Delicious, appetizing and healthy - perfect family breakfast! Millet porridge with pumpkin in a pot is one of the tastiest porridges for cold days. First it simmers on the stove, then finishes in the oven, so it turns out fluffy, rich in flavor and very tasty.

Preparation
Step 1
Dessert varieties of pumpkin are best for this porridge - they are sweeter. Use milk of any fat content: the richer it is, the tastier (and more caloric) the porridge will be. Take good quality, real butter.
Step 2
Wash and cut the pumpkin. Remove the seeds together with the fibrous pulp, but don’t throw them away - dry them in a dry pan, they are very tasty and healthy. Cut the pumpkin into pieces and remove the peel from each piece. Be careful: pumpkin is very firm, so it’s easier to peel smaller chunks.

Cut the peeled pumpkin into small cubes.
Step 4
Sort through the millet, removing unhulled grains and any debris. Put the groats into a sieve and rinse very well under cool running water. Then leave it in the sieve so that the water can drain.
Step 5
Pour the milk into a suitable saucepan or pot and place over low heat. As soon as it comes to a boil, add the pumpkin to the milk. Reduce the heat and cook the pumpkin for 5 minutes without covering the pot with a lid.
Step 6
Then pour the millet into the milk, add salt and sugar. Stir, cover with a lid and cook the porridge for about 10 minutes. Watch so the milk does not boil over, stirring from time to time. Then remove the pot from the heat.
Step 7
Take ceramic pots and divide the porridge between them. Cover the pots with lids and place into an oven preheated to 180°C (about 350–355°F). Bake the porridge for 30-35 minutes, depending on the size of the pots.
Step 8
Remove the pots from the oven and put a piece of butter into each one.
Step 9
Serve the porridge straight in the pots or transfer it to plates. You can add raisins, chopped prunes or dried apricots, nuts or honey to the porridge. Enjoy!
