Millet Porridge with Pumpkin Cooked in a Pot on the Stove

Step 1
For making the porridge, you can use either fresh or frozen pumpkin. Choose yellow and clean millet, free of impurities. The milk can be any fat content. You can slightly adjust the amount of sugar to your taste.

Pour the millet into a dry frying pan and place it over heat. Toast it over medium heat for 4-5 minutes. This helps remove the natural bitterness of millet.

Separately, pour water into a pot, bring it to a boil. Once boiling, add the prepared millet. Stir it in. Cook over low heat until the millet absorbs all the water, which usually takes 7-10 minutes.
Step 4
Peel fresh pumpkin and cut it into cubes. If using frozen pumpkin, simply place it directly into a saucepan. Add sugar and a couple of tablespoons of water to the pumpkin. Heat the pumpkin, stirring occasionally.

Cook the pumpkin for about 8-10 minutes until it becomes softer.

Once the millet has absorbed the water, add hot milk into the pot. You can cook the porridge with milk and water in various proportions, or only with milk, or only with water, depending on your taste. But it’s much tastier when cooked with milk. If you wish, add salt to taste.

Add the pumpkin. Continue cooking for another 20 minutes. During this time, the millet will swell significantly and become soft.
Step 8
Gradually, the porridge thickens as the milk is absorbed by the millet. The pumpkin adds sweetness and aroma. For a thinner consistency, you can add a bit more milk than the recipe states.
Step 9
Simple millet porridge with pumpkin is ready! Serve hot, portioned into bowls. You can add a knob of butter or fresh berries if you like. Enjoy your meal!
