Millet Porridge with Milk and Water

Preparation
Step 1
Measure both millet and liquids with the same size cup. You may need more milk depending on how thick you like your porridge. Adjust sugar and salt to your taste.
Step 2
Rinse the millet several times until the water runs clear. Then drain it in a sieve. Boil some water and pour it over the millet from a kettle. This removes the natural bitterness in millet.
Step 3
Transfer the millet into a saucepan with a thick bottom and pour in clean cold water. Place it over medium heat and bring to a boil.
Step 4
Once it boils, reduce the heat and cook the millet, stirring occasionally, until all the water evaporates. You can partially cover the saucepan with a lid.
Step 5
As soon as the water evaporates, immediately pour in the milk, add salt and sugar, and stir. Let the porridge cook over low heat. Do not cover the pan entirely with a lid to prevent the milk from boiling over.
Step 6
If the porridge becomes too thick while the millet is still firm, pour in a little more milk. The amount of milk determines how thick or runny your porridge will be.
Step 7
When the millet is fully soft, turn off the heat, add butter to the porridge, cover the saucepan with a lid, and leave it to rest for 10 minutes.

Serve the porridge at the table. Enjoy your meal!
