Easy
More than 1 hour.
Preparation
Step 1
Use milk of any fat content (I used 3.2%). The higher the fat content, the richer and more calorie-dense the porridge will be. To make the millet even tastier, you can optionally add your favorite fruits (like apples or bananas) or dried fruits (like raisins or dried apricots) during cooking.
Step 2
Sort through the millet to remove any debris and rinse it thoroughly under running water. You can use a fine-mesh sieve for this.
Step 3
Pour cold water over the millet and leave it to soak for about 2 hours so it swells slightly. This reduces the cooking time in the pot.
Step 4
Take a pot with a thick bottom. Drain the water from the millet, place it into the pot, and pour in the milk. Bring the milk and millet to a boil, stirring constantly so the millet doesn’t stick to the bottom or burn. Skim off any foam that forms.
Step 5
Cook the porridge for about 30 minutes, stirring occasionally. You can cover the pot with a lid and reduce the heat to the lowest setting on the stove.
Step 6
Add a pinch of salt and pour in the sugar. Stir well. If the millet swells significantly and the milk evaporates too much, add a bit more milk as needed. Check the millet for doneness - it should be well cooked and soft.
Step 7
Add butter to the porridge and cook for another 5 minutes.
Step 8
Serve the finished millet porridge hot. Ladle it into bowls and decorate with berries or fruits as desired (I used raspberries, blueberries, and mint leaves). Enjoy!
