Step 1
How to make microwave cottage cheese casserole with semolina? Prepare the necessary ingredients. I used 5% fat cottage cheese, but you can use any, even fat-free if you’re okay with it. Sugar can be replaced with a sweet plant-based syrup. If you like, add a little vanilla sugar to make it even more aromatic. Vegetable oil is needed only for greasing the dish.

In a deep bowl, combine the cottage cheese, crack in the egg, and add the sugar.

Add the semolina and baking powder. The baking powder helps the casserole rise higher, and the semolina helps stabilize its volume after cooling.

Using a mixer (or a whisk), mix the cottage cheese batter until smooth.

Grease a microwave-safe baking dish with a small amount of sunflower oil. Spoon in the batter, leaving 2-3 cm (about 1 inch) from the rim, because the casserole will rise well during cooking. I used a ceramic dish with a 10 cm (4 in) diameter.
Step 6
Put the casserole into the microwave. It’s a good idea to cover the dish with a special microwave splatter cover. I cooked it for 10 minutes at 800 W. If your microwave is more powerful, you’ll need less time, and vice versa. Also note that even two identical microwave models can cook differently, so the time and power are approximate. The casserole should “set,” meaning it becomes firm on top and doesn’t spread.
Step 7
Cottage cheese casserole is usually served with sour cream. If desired, decorate with your favorite berries. Enjoy!
