Meatballs with Vegetables in a Skillet

Step 1
In this recipe, I used a mix of frozen vegetables, but you can also cook it with fresh ones from the garden or store. Ground chicken, beef, or a mix of different meats will work. Tomato sauce can be replaced with tomato juice or ketchup.
Step 2
Peel and rinse the onion. Chop half of it very finely and add it to the ground meat. Salt to taste, add your favorite dry spices, and mix thoroughly. Let the mixture rest for about 10-15 minutes.
Step 3
Shape the meat mixture into small meatballs.
Step 4
Heat 2 tbsp of vegetable oil in a skillet. Add the meatballs and fry until they get a nice golden crust.
Step 5
In the same skillet, heat the remaining oil. Finely chop the other half of the onion and sauté lightly. Add the rest of the vegetables to the onion. Stir and cook for about 5-10 minutes.
Step 6
Add tomato sauce and half a cup (about 4 fl oz) of boiling water to the vegetables, salt to taste, and mix. Place the meatballs into the vegetable mixture. Gently stir so the meatballs are covered with sauce. Cover the skillet with a lid, reduce the heat to just below medium, and simmer until everything is fully cooked. It took me about 20-25 minutes (depending on the size of the vegetables and meatballs).
Step 7
Sprinkle the finished dish with finely chopped herbs. Use dill, parsley, or green onions. Add pepper if desired.

Serve hot as a main dish or as a side with boiled grains, mashed potatoes, or pasta.
