Meatball Soup with Potatoes

A light and hearty dish. Especially good when made with chicken meatballs - even toddlers can enjoy it!

If you make this soup with chicken meatballs and potatoes, it turns out more dietary and can even be served to small children.
Preparation
Step 1
You can use ground meat of any type for the meatballs – pork, beef, chicken, or a mix. I’ll use pork. Peel and rinse the potatoes in advance.
Step 2
Peel the onion, rinse it, and finely chop. Add half of the chopped onion to the ground meat. Add salt and mix well.
Step 3
Pour water into a pot, place it over heat, and bring to a boil. Shape the ground meat into small balls and drop them into the boiling water.
Step 4
Cut the peeled potatoes into small pieces and add them to the pot with the meatballs. Cook for about 15 minutes.
Step 5
Peel and grate the carrot. Heat a frying pan and pour in a little vegetable oil. Add the grated carrot and remaining chopped onion. Sauté for 4-5 minutes over low heat, then transfer the sautéed vegetables to the soup.
Step 6
Cook the soup for another 5 minutes. Salt to taste. You can add a bit of dried spices and chopped fresh herbs. Remove the finished soup from heat, ladle it into bowls, and serve hot. Enjoy!
