Meat with Tomatoes and Onions in the Oven

Besides pork, you can use any other meat for this dish. Keep in mind that cooking time, as well as the taste and calorie content of the dish, will vary. For example, beef takes longer to cook than pork, while chicken breast or turkey needs less time.
Preparation
Step 1
For baking, you can use any type of meat: lamb, beef, or, as in my case, pork. Choose boneless meat. A little fat is fine, as it will make the roasted meat juicier. The neck cut works perfectly. Choose spices to your liking. I’m using ground pepper and a bit of paprika.
Step 2
Cut the meat into small pieces and tenderize it on both sides using a kitchen mallet.
Step 3
You can use any oven-safe baking dish. I’m using a ceramic one. Grease the bottom and sides of the dish with vegetable oil, then lay the tenderized pieces of meat inside. Sprinkle the meat with salt and spices. Rub the spices into the meat and let it sit for 15-20 minutes. Peel the onion and rinse it under cold water. Then slice it into half-rings. Spread the sliced onions evenly over the surface of the meat.
Step 4
Cut the tomatoes into slices and spread them on top of the onions. Place the baking dish into a preheated oven at 200°C (about 390°F) for about 30 minutes. During this time, excess moisture will evaporate from the meat, and the tomatoes will slightly dry out. Then lightly cover the top with foil and leave the meat in the oven for another 15-20 minutes to finish cooking. It doesn’t need to be sealed tightly - just cover it to prevent the top from burning.
Step 5
Remove the cooked meat from the oven, sprinkle it with fresh herbs, and serve hot. Enjoy your meal!
