Preparation
Step 1
Choose boneless pork, such as pork loin. Use firm, juicy tomatoes that hold their shape when sliced. Cherry tomatoes are fine, but regular ones also work. Choose cheese that grates easily and melts well.
Step 2
Cut the meat into serving-sized pieces, and pound them with a kitchen mallet. To prevent tearing, cover the meat with plastic wrap before pounding.
Step 3
Grate the cheese in advance. Wash the tomatoes and slice them into rounds.
Step 4
Peel and rinse the onion under cold water, then finely chop it. Heat oil in a skillet until hot, then add the onion. Sauté for 3–4 minutes over low heat until golden. Remove the sautéed onion and place it on a plate.
Step 5
Next, place the pounded meat in the same skillet and sear it well on one side.
Step 6
Flip the meat over and season it with salt and spices.
Step 7
Spread a thin layer of mayonnaise on the meat. Then, add the sautéed onion and arrange the tomato slices on top. For better taste and health benefits, use homemade mayo if you have it.
Step 8
Sprinkle grated cheese on top, then cover the skillet with a lid. Cook over low heat for 15–20 minutes.
Step 9
During this time, the meat will release juices and simmer until tender. The tomatoes will soften, and the cheese will melt.
Step 10
Transfer the ready meat with tomatoes and cheese onto plates and serve hot. Enjoy your meal!
